Thickeners are food additives which are used to thicken and stabilize various foods. These agents provide the foods with texture through formation of a gel. Some stabilizers and thickening agents are gelling agents. Typical gelling agents include include Cape Crystal Brands sodium alginate (E401); potassium alginate (E402); agar agar (E406); konjac gum (E1420) and, kappa carrageenan (E407).
